做(zuò )法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用(yòng )姜块(kuài )在锅上(shàng )擦一遍,放两勺(sháo )油,待油六成热下鱼,煎(jiān )至微黄。煮沸(fèi )瓦(wǎ )煲里的清水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其他材料,武(wǔ )火煮沸,转中(zhōng )小(xiǎo )火煲一个半小时,下盐调(diào )味即可品尝。 -
