做(zuò )法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡(pào )软,拍裂一小块姜,热锅,用姜块在锅上擦一遍,放两勺油,待(dài )油六成(chéng )热(rè )下鱼,煎至微黄(huáng )。煮沸(fèi )瓦煲里的清(qīng )水,放(fàng )入煎煮(zhǔ )好的鲫(jì )鱼和其他材料,武火煮沸,转中(zhōng )小火煲一(yī )个半小时,下盐(yán )调味即可品尝。 -
