做法:春(chūn )笋切成(chéng )片后加少(shǎo )许(xǔ )盐(yán )捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加(jiā )入生(shēng )抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。 -
