做(zuò )法:春笋切成片后加少许盐(yán )捞(lāo )出后用清水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩(yǎn )住(zhù )春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快(kuài )熬干(gàn )的时候加入盐,翻炒均匀(yún )稍收汁时(shí )盖上(shàng )锅盖焖。 -
