做(zuò )法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上锅盖(gài )焖。 -
