做法:洗净宰好鲫鱼,洗(xǐ )净淮(huái )山和薏米。用清水(shuǐ )把陈(chén )皮泡软(ruǎn ),拍裂一(yī )小块姜,热(rè )锅,用姜(jiāng )块在锅(guō )上擦一遍,放两勺油,待油六成(chéng )热(rè )下鱼,煎至微黄。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼(yú )和其(qí )他材料,武火煮(zhǔ )沸,转(zhuǎn )中(zhōng )小火煲一个半小时,下盐调味即可品(pǐn )尝。 -
