做(zuò )法:春笋切成片后加少许盐捞出后用清(qīng )水浸(jìn )泡(pào ),生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半(bàn )掩住春笋,盖上(shàng )锅(guō )盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖(mèn )。 -
