做法:洗净宰好鲫(jì )鱼,洗(xǐ )净淮山和薏米(mǐ )。用清水把(bǎ )陈皮泡软,拍(pāi )裂(liè )一小(xiǎo )块姜,热锅,用姜块在锅(guō )上(shàng )擦一遍,放两(liǎng )勺油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清水(shuǐ ),放入(rù )煎煮好的鲫鱼和其他材料,武火煮(zhǔ )沸,转中(zhōng )小火煲一个半(bàn )小时,下盐调味即可品尝。 -
