做(zuò )法(fǎ ):春笋切成片(piàn )后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切(qiē )成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住(zhù )春笋,盖上(shàng )锅盖(gài )大(dà )火煮开(kāi )后转中火。煮到水快(kuài )熬干的时候加入盐(yán ),翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。 -
