做(zuò )法(fǎ ):春笋切成片后加少许盐捞出后(hòu )用(yòng )清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱(cōng )段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少量清(qīng )水半(bàn )掩住(zhù )春笋,盖上锅盖大火煮开(kāi )后转中火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。 -
