做法(fǎ ):洗净宰好鲫(jì )鱼,洗(xǐ )净淮山和薏米。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用(yòng )姜块在(zài )锅上擦一遍,放两勺(sháo )油,待油(yóu )六成热下鱼(yú ),煎(jiān )至微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼(yú )和其他材(cái )料,武火煮沸,转中小火(huǒ )煲(bāo )一个半小时,下(xià )盐调味即可品尝。 -
