做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清(qīng )水把陈皮泡软(ruǎn ),拍裂一小块姜(jiāng ),热锅,用姜(jiāng )块在锅(guō )上擦一遍,放(fàng )两勺油,待油(yóu )六成(chéng )热下鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲(bāo )里的清水,放(fàng )入煎煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小时,下(xià )盐(yán )调味即可品尝。 -
