做(zuò )法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏米。用清水把陈皮泡软(ruǎn ),拍裂一小(xiǎo )块姜,热锅(guō ),用姜块在(zài )锅上擦一遍,放两勺油,待油(yóu )六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清(qīng )水,放入煎煮(zhǔ )好的鲫鱼和其他材(cái )料(liào ),武火煮沸,转(zhuǎn )中(zhōng )小火煲一个半小(xiǎo )时,下盐调味(wèi )即可品(pǐn )尝。 -
