做(zuò )法:春笋切成片后加少许(xǔ )盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生(shēng )姜、春笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水(shuǐ )半掩住春笋,盖(gài )上锅(guō )盖大火煮开(kāi )后转中火。煮到水快熬干的时候加(jiā )入(rù )盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖。 -
