做(zuò )法(fǎ ):洗净宰好鲫鱼,洗(xǐ )净淮山和薏米。用清水把陈皮泡(pào )软,拍裂一小(xiǎo )块姜,热锅,用姜块在锅上(shàng )擦一(yī )遍,放两勺油,待(dài )油六成热下鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲里的清水,放入(rù )煎煮(zhǔ )好的鲫(jì )鱼和(hé )其他材料,武火煮沸,转中小火煲一个半小时(shí ),下盐调(diào )味即(jí )可品尝。 -
