做(zuò )法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左(zuǒ )右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖上(shàng )锅盖大(dà )火煮开后转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅盖焖。 -
