做(zuò )法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用清水(shuǐ )浸泡,生(shēng )姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右(yòu )。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水半掩住春(chūn )笋,盖上锅盖大(dà )火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。 -
