做法(fǎ ):洗净宰(zǎi )好鲫鱼,洗净淮(huái )山和薏米。用清水把陈皮泡软,拍裂一小块(kuài )姜,热锅,用姜(jiāng )块在锅上(shàng )擦一(yī )遍(biàn ),放两(liǎng )勺油,待油六成热下鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦(wǎ )煲里的清水,放入煎煮(zhǔ )好的鲫鱼和(hé )其他材料,武火煮沸,转中(zhōng )小火煲一个半小(xiǎo )时,下盐调(diào )味即可品尝(cháng )。 -
