做(zuò )法:洗净宰好(hǎo )鲫鱼(yú ),洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜,热锅,用姜块在(zài )锅(guō )上擦一遍,放两勺油,待(dài )油六成(chéng )热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫(jì )鱼和其他材(cái )料,武火煮沸,转中(zhōng )小火煲一(yī )个半小时,下(xià )盐调味即可品尝(cháng )。 -
