做法:春(chūn )笋切成片后加少许盐(yán )捞出后用清水浸(jìn )泡,生姜切片,葱切成段(duàn )。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛(niú )肉片、葱(cōng )段翻(fān )炒1分钟(zhōng )左右。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水(shuǐ )快(kuài )熬干的时候(hòu )加入盐,翻炒(chǎo )均匀稍收(shōu )汁时(shí )盖上(shàng )锅盖焖。 -
