做(zuò )法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜(jiāng ),热(rè )锅,用(yòng )姜块在锅上擦一遍,放两勺油,待油六成热(rè )下鱼,煎至微(wēi )黄。煮沸瓦煲里的清(qīng )水,放(fàng )入煎煮好的鲫鱼和其(qí )他(tā )材料,武(wǔ )火煮沸,转(zhuǎn )中(zhōng )小火煲一个半小时,下盐调味即可(kě )品尝。 -
