做(zuò )法:春笋切成片后(hòu )加少许盐(yán )捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水半(bàn )掩住春笋,盖(gài )上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入(rù )盐,翻炒(chǎo )均匀稍(shāo )收汁时盖(gài )上锅(guō )盖焖。 -
