做(zuò )法:洗净(jìng )宰好鲫(jì )鱼,洗净淮山和薏米。用清水(shuǐ )把陈(chén )皮泡软,拍裂一小块姜(jiāng ),热锅(guō ),用姜块(kuài )在锅(guō )上擦一遍,放两勺油,待(dài )油(yóu )六成热下(xià )鱼,煎至微黄。煮沸瓦煲里(lǐ )的清水,放入(rù )煎(jiān )煮好(hǎo )的鲫鱼和其他材料,武火煮沸,转中小火煲一个(gè )半小时,下(xià )盐调味即可品尝。 -
