做(zuò )法(fǎ ):春笋切(qiē )成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖(gài )上锅盖大火煮开后(hòu )转中火。煮(zhǔ )到水(shuǐ )快熬(áo )干(gàn )的时候加(jiā )入盐,翻炒均匀(yún )稍(shāo )收汁时盖(gài )上(shàng )锅盖焖。 -
