做法(fǎ ):洗净宰好鲫(jì )鱼(yú ),洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂(liè )一小块姜,热(rè )锅,用(yòng )姜块在锅(guō )上擦一遍,放两勺油(yóu ),待油六成热下鱼(yú ),煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转中小火煲一(yī )个半(bàn )小时,下盐(yán )调味即(jí )可品尝。 -
