做(zuò )法:洗净宰好鲫鱼(yú ),洗净淮山和薏(yì )米。用(yòng )清水把陈皮泡(pào )软,拍裂(liè )一小块姜,热锅,用姜块(kuài )在锅上(shàng )擦一遍,放两(liǎng )勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水(shuǐ ),放(fàng )入煎(jiān )煮好的鲫鱼和(hé )其(qí )他材料,武火煮沸,转中小火煲一个半(bàn )小时,下盐(yán )调味即可品尝。 -
