做法:洗净宰(zǎi )好(hǎo )鲫鱼,洗(xǐ )净淮(huái )山和薏(yì )米。用(yòng )清水把陈皮泡软,拍(pāi )裂一小块姜,热锅,用姜块在锅上擦(cā )一遍(biàn ),放(fàng )两勺油,待油六成热(rè )下鱼,煎至微黄。煮沸瓦煲里的清(qīng )水,放入煎煮好的鲫鱼(yú )和其(qí )他材料,武火(huǒ )煮沸,转中小火煲一(yī )个半小时,下盐调味即可(kě )品尝。 -
