做法:洗(xǐ )净宰好鲫(jì )鱼,洗净淮山和薏米。用清水把陈皮泡软,拍(pāi )裂(liè )一小块姜,热锅,用姜块在锅(guō )上擦一遍,放两(liǎng )勺油,待(dài )油六成热(rè )下鱼(yú ),煎至微(wēi )黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材料,武火煮沸(fèi ),转(zhuǎn )中小火(huǒ )煲一(yī )个半(bàn )小(xiǎo )时,下盐调(diào )味即可品(pǐn )尝。 -
