做(zuò )法:洗净宰好鲫(jì )鱼,洗净淮山和薏米(mǐ )。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热(rè )锅,用姜块在锅上擦一遍,放两勺油,待油六(liù )成热下(xià )鱼,煎至(zhì )微(wēi )黄。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其(qí )他材(cái )料,武(wǔ )火煮沸,转中小(xiǎo )火煲一个半小(xiǎo )时,下盐调味即可(kě )品尝。 -
