做(zuò )法(fǎ ):春笋切(qiē )成片后加(jiā )少许盐(yán )捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺(sháo )油,放(fàng )入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再(zài )加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。 -
