做法:洗(xǐ )净宰好鲫鱼,洗净淮(huái )山和薏(yì )米。用(yòng )清水把(bǎ )陈皮泡(pào )软,拍裂一小块姜,热锅,用(yòng )姜块在锅上擦一遍(biàn ),放两勺(sháo )油,待油(yóu )六成热下(xià )鱼,煎至微黄。煮沸瓦(wǎ )煲(bāo )里(lǐ )的清水,放(fàng )入煎煮好的鲫鱼和其(qí )他材料,武火煮沸,转中小火煲一个半小时,下盐调味即可品尝。 -
