做(zuò )法:春(chūn )笋切成片后加少许盐捞出(chū )后用清(qīng )水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒(chǎo )均匀,加入(rù )少量清水半掩住春(chūn )笋,盖(gài )上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候(hòu )加(jiā )入(rù )盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。 -
