做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈(chén )皮(pí )泡软(ruǎn ),拍裂(liè )一小块姜,热(rè )锅,用姜块在锅上擦一遍,放两勺油,待(dài )油六成(chéng )热下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水(shuǐ ),放入煎煮好的鲫(jì )鱼和(hé )其他材料,武火煮沸,转中(zhōng )小火煲一个半小(xiǎo )时,下盐调味即可品(pǐn )尝。 -
