做法:洗(xǐ )净(jìng )宰(zǎi )好(hǎo )鲫鱼,洗净淮山和薏(yì )米。用(yòng )清(qīng )水(shuǐ )把陈(chén )皮泡软,拍裂一小块姜,热锅,用(yòng )姜块在锅上擦一遍,放两勺油,待油六(liù )成热下(xià )鱼,煎至微黄。煮沸瓦煲(bāo )里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材(cái )料(liào ),武火煮沸,转中小火煲一个半小时,下盐(yán )调味即可品尝。 -
