做法:洗(xǐ )净宰(zǎi )好(hǎo )鲫(jì )鱼,洗(xǐ )净淮山和(hé )薏米。用清水把陈(chén )皮(pí )泡软,拍裂一小块姜,热锅,用姜块在锅上擦(cā )一遍,放两勺油,待油六(liù )成热(rè )下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其(qí )他(tā )材(cái )料,武火煮沸,转中小火煲一个半小时,下盐(yán )调味即可品(pǐn )尝。 -
