做(zuò )法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂一(yī )小块姜(jiāng ),热锅,用姜块在锅(guō )上擦(cā )一遍,放两勺油(yóu ),待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清(qīng )水,放入煎煮好的鲫(jì )鱼和其他材料,武火煮沸,转中(zhōng )小火煲(bāo )一个半小时(shí ),下盐调(diào )味即可品尝。 -
