做(zuò )法:春笋切成片后加(jiā )少许盐捞(lāo )出后用清水浸泡(pào ),生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水半掩(yǎn )住春笋,盖上锅盖大(dà )火煮开(kāi )后转中火。煮(zhǔ )到(dào )水快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。 -
