做(zuò )法(fǎ ):春笋(sǔn )切成片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住(zhù )春笋,盖(gài )上锅盖(gài )大火煮开后转中火。煮到(dào )水快熬(áo )干的时候(hòu )加(jiā )入盐,翻炒(chǎo )均匀(yún )稍收汁时盖上(shàng )锅盖焖。 -
