做(zuò )法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把(bǎ )陈(chén )皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦一(yī )遍,放两勺油,待(dài )油六成(chéng )热下鱼,煎(jiān )至微(wēi )黄。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫(jì )鱼和其(qí )他材料,武火煮沸,转中小火煲一个半小(xiǎo )时(shí ),下盐调(diào )味即可品尝。 -
