做(zuò )法:洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山和薏米。用清水把(bǎ )陈皮(pí )泡(pào )软,拍裂(liè )一小块(kuài )姜,热锅,用姜块在锅上(shàng )擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼(yú )和(hé )其他材(cái )料,武火(huǒ )煮沸,转中小火煲(bāo )一个半小时,下盐(yán )调味即可品尝。 -
