做法(fǎ ):洗(xǐ )净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜,热(rè )锅,用姜块在锅上(shàng )擦一(yī )遍,放两勺油,待油六成(chéng )热下(xià )鱼,煎至(zhì )微(wēi )黄。煮沸瓦(wǎ )煲里(lǐ )的清水,放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小(xiǎo )火煲一个半(bàn )小时,下盐调味(wèi )即可品尝。 -
