做(zuò )法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩(yǎn )住春(chūn )笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候(hòu )加入(rù )盐,翻炒均匀稍(shāo )收汁时(shí )盖上(shàng )锅盖焖(mèn )。 -
