做(zuò )法:春笋切(qiē )成片后加少(shǎo )许(xǔ )盐捞出(chū )后用清水浸泡(pào ),生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半(bàn )掩住春笋(sǔn ),盖(gài )上(shàng )锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐(yán ),翻炒均匀稍(shāo )收(shōu )汁时盖上锅盖焖。 -
