做法(fǎ ):洗(xǐ )净宰好(hǎo )鲫(jì )鱼,洗净淮山(shān )和薏米。用清水把陈皮泡软,拍(pāi )裂(liè )一小(xiǎo )块姜(jiāng ),热锅,用姜块在锅上擦(cā )一(yī )遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎(jiān )煮好的鲫(jì )鱼和其(qí )他材(cái )料,武火煮(zhǔ )沸,转中小火煲一个半小时,下盐调味(wèi )即可品尝。 -
