做(zuò )法(fǎ ):春笋切(qiē )成片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少(shǎo )量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大(dà )火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖上锅盖焖。 -
