做(zuò )法:春(chūn )笋切成片(piàn )后加少许盐(yán )捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖上锅(guō )盖(gài )大火(huǒ )煮开(kāi )后转中火。煮(zhǔ )到水快熬(áo )干的时候(hòu )加入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅盖焖(mèn )。 -
