做法:洗净宰好鲫鱼,洗净淮山和薏米。用(yòng )清水(shuǐ )把陈(chén )皮泡软(ruǎn ),拍(pāi )裂一小块姜,热锅(guō ),用姜块在锅(guō )上擦一(yī )遍,放(fàng )两勺油,待(dài )油(yóu )六成热(rè )下鱼,煎(jiān )至微黄。煮沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和(hé )其他材(cái )料,武火煮沸,转(zhuǎn )中小火煲一个半(bàn )小时,下盐调味即可品尝。 -
