做(zuò )法:春笋切成片后(hòu )加(jiā )少许盐捞出(chū )后用清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛(niú )肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩(yǎn )住(zhù )春笋,盖上锅(guō )盖大火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。 -
