做(zuò )法:洗净宰(zǎi )好鲫鱼,洗净淮山(shān )和薏米。用清水把陈皮泡软(ruǎn ),拍(pāi )裂一小块姜,热锅,用姜块在锅(guō )上擦一遍,放(fàng )两勺(sháo )油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清水,放入(rù )煎煮好的鲫(jì )鱼和其他(tā )材料(liào ),武(wǔ )火煮沸,转中小火(huǒ )煲(bāo )一个半(bàn )小时(shí ),下盐调味即可品尝。 -
