做法:洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山(shān )和薏米。用清水把陈(chén )皮泡软,拍裂(liè )一小块姜,热锅,用(yòng )姜(jiāng )块(kuài )在锅上擦(cā )一遍(biàn ),放两(liǎng )勺油(yóu ),待油六成热下鱼(yú ),煎(jiān )至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲一个半小时(shí ),下盐调味即可品尝。 -
